Simple Mahi Dinner What you Need Potatoes, one lemon, one tomato, three nice shallots, one small Spanish onion, and a fillet of Mahi Mahi (any other fish can be used) Olive oil and Lemon Juice. What to do Make basic mash but put Olive Oil and Lemon juice in it, instead of butter and milk. Cut shallots, onion quite chunky, cut the tomato and lemon in wedges. In a pan add butter and place fish into pan once hot. Cook fish almost all the way through and then add rest of ingredients to pan and cook until the tomato is just warm and the serve over the mash base and enjoy the lovely flavours.
