Jewfish on Lime and Garlic Mash What you need: 1 200-240gm fillet 3 Asparagus spears 4 Potatoes 1 teaspoon Garlic 1 small sweet potato ( Kumera) 1and half cups extra virgin olive oil 1 and half cups Lime juice Method - Peel and cook potatoes, peel sweet potato and cut into long sticks
- Place jewfish fillet on BBQ or in pan and cook for around 3-5 minutes each side depending on thickness ( may take up to 15 mins for fish to cook)
- Strain potatoes and mash well adding Garlic ½ cup olive oil, ¾ cup of lime juice and pepper and salt to tatse
- If cooking fish on BBQ Chargrill your asparagus and sweet potato wont take very long to cook if not just add it to pan with butter and saute lightly
- Once all that has been done serve it up and enjoy the meal
