Jewfish on Lime and Garlic Mash

 

What you need: 1 200-240gm fillet

                             3 Asparagus spears

                             4 Potatoes

                             1 teaspoon Garlic

                             1 small sweet potato ( Kumera)

                             1and half cups extra virgin olive oil

                             1 and half cups Lime juice

Method

  1. Peel and cook potatoes, peel sweet potato and cut into long sticks
  2. Place jewfish fillet on BBQ or in pan and cook for around 3-5 minutes each side depending on thickness ( may take up to 15 mins for fish to cook)
  3. Strain potatoes and mash well adding Garlic ½ cup olive oil,  ¾  cup of lime juice and pepper and salt to tatse
  4. If cooking fish on BBQ Chargrill your asparagus and sweet potato wont take very long to cook if not just add it to pan with butter and saute lightly
  5. Once all that has been done serve it up and enjoy the meal
